Today we will begin our culinary journey of slushy Delhi winters. Our first stop in this journey is at a famous snack station: Matar Kachori. These are deep-fried kachori stuffed with well cooked green peas. This popular street food snack must have witnessed many winter tea sessions in house, office and parties.
So the next stop in this journey, is a favourite of every local, whether a Marathi, Bengali, Keralite or Punjabi. This dish is: Sarson da Saag and Makki di Roti. Sarson da Saag is made from mustard greens, and Makki di Roti is a cornmeal flatbread. This nutritious winter meal goes to a different level when it’s served with some desi ghee.
Delhi without mention of Mughal, especially in cuisine is incomplete. Our next stop of this expedition is a slow-cooked stew made with meat, often lamb, and a blend of spices. It’s relished with naan or steamed rice both. It’s the famous Kebabs or tikkas.
The sweet destination of this journey is a ritual dish Gajar ka Halwa. There could be hardly any house of Delhi which does not make this winter dessert once in the season. Gajar ka Halwa is a made from grated carrots, milk, sugar, ghee and served warm.
